This version of a Ratatouille is a simplified version, which took me about 15-20 mins to prep and cook.
You will need:
1 Bell Peppers (Green, Yellow, Red)
Basil as much as you want.
Mint as much as you want.
Herbs de Provence
…..and some Champagne to enjoy will cooking
Cut the vegetables in cubes or small pieces. In a saucepan add the bell peppers and butter, you can use a table spoon or more of butter; remember the French love their butter so being generous is recommended.
Once the butter melts and the bell peppers are starting to cook add the egg plant and zucchini. I like my vegetables saute when they still have some of that crunch.
Add some salt, Herb de Provence and the basil and mint and lower the hit (or turn it off). Mixt it very well so the flavor of the fresh basil and mint are all over.
I paired it with a Franck Bonville Blanc de Blanc Brut Champagne. Cheers!
